Really...it is not just one element, but a combination of time - honored traditions which produce the sublime experience of Go Barista. Thanks to my father Albert Siboni a Master Coffee Roaster from Burgundy, France.

Firstly...the beans quality. Not only should they be Arabica beans - but the very best Arabica beans from high altitude equatorial regions renowned for their coffee bean production.

  Secondly...the blend.  Single bean coffee are not always the most interesting taste, the real skill of the "Torrefacteur" (Coffee Roaster) comes into play during the blending from different regions. Knowing the taste qualities of each type of coffee bean and how the characteristics of each are balanced and enhanced by judicial combination with the others.

Finally...the coffee roasting process itself. if it can be done faster, it can be done more cheaply and profits will be higher. The result is beans which reflects the hast of their roasting - uneven colour and burnt edges giving an unpleasant bitter taste to the coffee. At the present time what is your coffee looks like! Simply take a full hand of your coffee beans and check if you find burnt, broken or even oily beans. Did you know...the heavy fat content from a dark roast goes directly to your blood system!...

Not so with Go Barista...the meticulous attention given to the roasting conditions and the keen eye of the Torrefacteur to pick the "Robe de Moine" the end point of roasting where the coffee beans are the colour of a French priest's clothing and have been roasted to perfection.
